Makes about 5 dozen

1   cup firmly packed light brown sugar   

1/2   cup vegetable shortening  

1/4   cup ( 1/2 stick) butter  

1/2   cup sugar  

1   egg  

1   teaspoon grated orange rind  

1/4   cup water  

1   teaspoon vanilla  

1   cup dried cranberries   

3   cups old-fashioned rolled oats  

1   cup flour  

1   teaspoon salt   

1/2   teaspoon baking soda   

Preheat oven to 350 degrees. In large bowl, beat brown sugar, shortening, butter and white sugar until creamy. Add egg, orange rind, water and vanilla, and beat well. Mix together cranberries, oats, flour, salt and baking soda. Add to creamed mixture. Drop dough by rounded teaspoonfuls onto ungreased cookie sheets. Bake 11 to 13 minutes or until edges are golden brown. Remove to wire rack. Cool completely. Store tightly covered.
